Jazzing up the ordinary Italian sausage

Ahhh how to change up the ordinary.....Instead of frying or grilling up the usual supermarket bought Italian sausages, try this recipe to jazz it up a bit. It can be served over rice, pasta, with some crusty bread or...how about just plain old romaine lettuce for those who are carb conscious? (And who isn't these days?)

30 Minutes

Ingredients:

1) Six hot (or mild) Italian sausages (merguez, or any type of raw spiced European sausage will do). Slice up the sausages into bite sized morsels

2) 1 TSP salt, half TSP ground black pepper (or to taste)

3) 1 cup red wine

4) 6 cloves minced garlic

5) 2 pieces red hot chili (optional), sliced

6) 1 TSP chili powder

7) 1 medium onion sliced into rings

8) Half a red or green bell pepper

9) Half a lemon

10) 6 to 7 TBSP extra virgin olive oil

11) 4 to 5 large lettuce leaves (romaine, red lettuce, iceberg, the greener the better)

To do:

1) In heated up olive oil in wok, stir fry garlic and red chili pepper until aroma is released. Do not burn

2) Add sliced up sausages and stir fry it all up until the meat is browned on all sides. Add the red bell pepper, cayenne powder, salt, black pepper. Continue to stir fry until pepper is cooked.

3) Add the red wine, squeeze the lemon juice in

4) Let it simmer in medium heat until almost all the liquid evaporates leaving just a bit of caramelized sauce on the bottom, to coat the sausages. What you want is a caramelized layer of sauce, so don't let it all simmer away.

5) Add the onions, stir fry while leaving it somewhat crunchy raw.

The sauce will get absorbed into the meat to add depth of flavour and some tanginess. Wrap the morsels inside a lettuce leaf and accompany with some steamed rice if desired.
