Sam's Curry Pork "giniling"

Here is an easy one dish meal recipe that is a fusion of Thai, Indian, and inspired by the Pinoy "giniling" dish. Giniling is the sauteed ground pork dish, always served with rice. To add more flavour, Indian spices are added and the Thai-inspired onion adds fresh sweet crunchiness. Here are the ingredients:

30 minutes

1) .5kg ground pork

2) 2 TBSP madras curry (Indian curry)

3) 1 TBSP garam masala (Indian spice mix), optional but it adds complexity of flavour

4) 8 cloves garlic - minced

5) 2 inch piece of ginger - minced

6) 1 TSP ground black pepper

7) 1 TBSP salt or to taste/preference

8) 2 pieces of green or red chili - chopped. Optional if you don't like it spicy.

9) 1 medium onion - sliced in rings

10) 1 large potato - peeled and sliced into small cubes

11) 1 cup chicken broth or water

To do:

1) Heat some oil in a wok to sautee the garlic and ginger. About 3 TBSP oil

2) When the aroma is released, add ground pork, salt, black pepper

3) Stir and cook the pork well, add the cubed potatoes, add the spices

4) Stir-fry the mixture for about 5 minutes, then add the cup of broth or water

5) Stir the pork so the broth is mixed in, let simmer. The pork shouldn't dry out so add more broth as needed but don't make it too saucy. Pork will also release liquid but will begin to dry out as the mixture simmers.

6) Be sure the potatoes are cooked, tender, but not mushy soft. Taste and add salt as needed.

7) When the saltiness is right to you, add the sliced onion and stir fry it all up. If not enough salt, this dish doesn't work.

8) Do not overcook the onions. You still want some crunchy rawness.

9) Add some chopped coriander to serve. The dish should be moist but not saucy.

Best over steamed rice or wrapped inside a thin flat bread such as a flour tortilla!
